
🍢 Saffron Shrimp Skewers
Ingredients (Serves 4)
- 1 lb large shrimp (peeled, deveined, tails on)
- 2 tablespoons olive oil (or melted butter)
- 2 tablespoons lemon juice
- 2 garlic cloves, minced (optional)
- 30 saffron threads (soaked in 2 tablespoons warm water or overnight ice-cube infusion)
- Salt & pepper, to taste
- Wooden or metal skewers
- Fresh parsley or cilantro, for garnish
- Lemon wedges, for serving
Step 1: Prepare the Saffron
- Place saffron threads in warm water (or on an ice cube overnight).
- Let steep until golden-red.
Step 2: Marinate the Shrimp
- In a bowl, mix olive oil, lemon juice, garlic (if using), salt, pepper, and the saffron infusion.
- Add shrimp and coat well.
- Cover and refrigerate for 20–30 minutes (do not over-marinate, or shrimp may become mushy).
Step 3: Skewer & Grill
- Thread shrimp onto skewers.
- Grill over medium-high heat for 2–3 minutes per side, until pink, golden, and slightly charred.
Step 4: Serve
- Arrange skewers on a platter.
- Garnish with fresh parsley or cilantro.
- Serve with lemon wedges for squeezing.
