🍢 Saffron Shrimp Skewers

Ingredients (Serves 4)
  • 1 lb large shrimp (peeled, deveined, tails on)
  • 2 tablespoons olive oil (or melted butter)
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced (optional)
  • 30 saffron threads (soaked in 2 tablespoons warm water or overnight ice-cube infusion)
  • Salt & pepper, to taste
  • Wooden or metal skewers
  • Fresh parsley or cilantro, for garnish
  • Lemon wedges, for serving

Step 1: Prepare the Saffron
  • Place saffron threads in warm water (or on an ice cube overnight).
  • Let steep until golden-red.

Step 2: Marinate the Shrimp
  • In a bowl, mix olive oil, lemon juice, garlic (if using), salt, pepper, and the saffron infusion.
  • Add shrimp and coat well.
  • Cover and refrigerate for 20–30 minutes (do not over-marinate, or shrimp may become mushy).

Step 3: Skewer & Grill
  • Thread shrimp onto skewers.
  • Grill over medium-high heat for 2–3 minutes per side, until pink, golden, and slightly charred.

Step 4: Serve
  • Arrange skewers on a platter.
  • Garnish with fresh parsley or cilantro.
  • Serve with lemon wedges for squeezing.
