
🍨 Saffron Kulfi (Frozen Saffron Dessert)
Ingredients (Makes 6–8 kulfis)
- 4 cups whole milk
- ½ cup sugar (adjust to taste)
- ¼ teaspoon saffron powder or 30 saffron threads (soaked in 2 tablespoons warm milk or ice infusion)
- ¼ cup pistachios (chopped)
- ¼ cup almonds (chopped)
- ½ teaspoon ground cardamom (optional, for fragrance)
Step 1: Prepare the Saffron
Soak saffron in 2 tablespoons warm milk (or place on an ice cube and let melt slowly) until golden-red.
Step 2: Cook the Milk
- In a heavy-bottomed pan, bring the milk to a gentle boil.
- Stir often and simmer for 15–20 minutes, until reduced slightly and thickened.
- Add sugar and stir until dissolved.
Step 3: Add Flavor
- Stir in the saffron milk, pistachios, almonds, and cardamom (if using).
- Simmer for another 5 minutes so the flavors blend.
- Remove from heat and let cool to room temperature.
Step 4: Freeze
- Pour the mixture into kulfi molds, popsicle molds, or small cups.
- Insert sticks and freeze for at least 6 hours (or overnight) until firm.
Step 5: Serve
- To unmold, briefly dip the molds in warm water and pull out the kulfi.
- Garnish with extra saffron threads or crushed pistachios.
- Serve immediately and enjoy the golden flavor of saffron!
