
🍰 Saffron Tiramisu
Ingredients (Serves 6–8)
- 30 saffron threads (soaked in 2 tablespoons warm milk or overnight ice-cube infusion)
- 1 cup strong brewed coffee (cooled)
- 2 tablespoons sugar (for coffee)
- 2 packages ladyfinger biscuits (about 24 pieces)
- 1 cup heavy cream (cold)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 8 oz mascarpone cheese (room temperature)
- Cocoa powder (for dusting)
- Crushed pistachios (optional garnish)
Step 1: Prepare the Saffron Infusion
- Soak saffron threads in warm milk (or place them on an ice cube overnight).
- This will give a golden-red liquid to flavor the cream.
Step 2: Prepare the Coffee Mixture
- Brew 1 cup strong coffee and stir in 2 tablespoons sugar.
- Let cool to room temperature.
Step 3: Make the Cream Layer
- In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
- In another bowl, beat mascarpone until smooth.
- Gently fold whipped cream into mascarpone.
- Add saffron infusion and fold until the cream is silky and golden.
Step 4: Assemble the Tiramisu
- Quickly dip each ladyfinger into the cooled coffee (don’t soak too long, just a quick dip).
- Arrange a single layer of dipped ladyfingers in the bottom of a glass dish (or individual cups).
- Spread half the saffron cream mixture on top.
- Add another layer of dipped ladyfingers.
- Spread the remaining saffron cream mixture evenly.
Step 5: Chill & Finish
- Cover and refrigerate for at least 4–6 hours (overnight is best).
- Before serving, dust generously with cocoa powder.
- Garnish with crushed pistachios and a few saffron strands.
