
Saffron Almond Flour Cookies
Ingredients (Makes ~18 cookies)
- 2 cups Saffron Almond Flour (finely ground, blanched)
- ½ cup sugar (or coconut sugar for a deeper flavor)
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg (room temperature)
- 3 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract (or almond extract for extra nuttiness)
Optional add-ins:
- ¼ cup chopped dark chocolate or chocolate chips
- ¼ cup chopped pistachios or almonds
Step 1: Prepare the Dough
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In another bowl, whisk egg, melted butter, and vanilla.
- Combine wet and dry ingredients until a soft dough forms. Stir in any add-ins.
Step 2: Shape & Bake
- Scoop tablespoons of dough and roll into balls.
- Place on baking sheet and flatten slightly with your hand or the back of a spoon.
- Bake for 10–12 minutes, until edges are lightly golden.
Step 3: Cool & Serve
- Let cookies cool on the tray for 5 minutes before transferring to a rack.
- Serve warm or store in an airtight container for up to 5 days.
