Saffron Mango Lassi

Ingredients (Serves 2–3)
  • 2 ripe mangoes (peeled, pitted, and cubed) — or 1 ½ cups mango pulp
  • 1 cup plain yogurt (chilled)
  • ½ cup cold milk (or water for lighter version)
  • 2–3 tablespoons sugar or honey (adjust to taste)
  • ¼ teaspoon ground cardamom (optional, for extra fragrance)
  • 30 saffron threads (soaked in 2 tablespoons warm milk or overnight ice-cube infusion)
  • Ice cubes (optional)
For garnish:
  • A few saffron strands
  • Crushed pistachios or almonds
Step 1: Prepare the Saffron

Soak saffron threads in warm milk (or place on an ice cube overnight) until the liquid turns golden-red.

Step 2: Blend the Lassi
  • In a blender, combine mango, yogurt, milk, sugar (or honey), cardamom, and the saffron infusion.
  • Blend until smooth and creamy.
  • Add ice cubes and blend again if you prefer it chilled and frothy.

Step 3: Serve
  • Pour into tall glasses.
  • Garnish with a few saffron threads and a sprinkle of crushed pistachios or almonds.
  • Serve cold and enjoy immediately.
